Maple Oat Sourdough Bread

This sourdough maple oat bread is so delicious. It is by for the most perfect sandwich bread, plus a great way to class up the classic PB&J. Bread that tastes good and is good for you. A perfect way to put that sourdough discard to some great use that the whole family will enjoy and be coming back for seconds!

Ingredients
- 1 1/2 cups oats
- 1/2 cup warm water
- 1 cup sourdough starter
- 1 cup oat milk (or milk of choice)
- 1/2 cup Maple Syrup
- 1 tbsp oil
- 1 1/2 cups all purpose flour
- 1 1/2 cups whole wheat flour
- 1 3/4 tsp salt
Instructions
- 8am – Mix the starter, maple syrup, warm water, oats, oil, and milk all together. Let this mixture sit for 10 minutes.
- While the wet ingredients are sitting mix together the flours, and salt.
- Add the dry ingredients to the wet and mix well with your hands. Just add cold water to your hands if the dough starts to stick.
- Cover the dough and let it sit for 30 min with a wet tea towel covering the bowl.
- After 30 minutes you will start to stretch the dough. Take one side of the dough and stretch it over the center. Rotate the bowl until you have stretched all sides. Repeat 3 times over 1 hour.
- Let the dough rise for 4 hours on the counter.
- 2:30pm – Roll out the dough and shape it into a log by folding it. Place the dough in a parchment covered loaf pan and let it rise on the counter for 3 hours
- Cover bread with plastic wrap and place in the fridge overnight
- The next morning – Bake at 400 degrees for 50 minutes.
