Lemon Garlic Pasta

We eat pasta in our household weekly and if we are being honest sometimes more than that. Pasta is a great midweek meal because it is so quick and easy and can be dressed with so many different flavors. One of our favorite go-to pasta dinners uses lemon and garlic, aromas that make the whole house smell good and is a constant reminder that you just made a great choice for dinner.

This meal tastes amazing, full of flavor and uses ingredients that won’t make you feel bloated afterwards. The foundation of this dreamy sauce is sauteed garlic that creates carmelly undertones that arrive with each bite. The use of lemon enhances this dish’s flavor by adding a tart flavor that is light and refreshing. The combination of lemon and garlic together dress the pasta so well.

This pasta dish is so versatile. It can be a meal all by itself or feel free to add your choice of meat on the side or mixed in. This recipe is a great base which can hold your favorite veggie combinations. Make it a fancy dinner set at the table or a relaxed dinner to accompany your favorite TV show. We prefer chickpea spaghetti noodles for this meal, but your favorite noodle style (or whatever is in the pantry) will be a great addition to this dish. From experience this meal also makes great left-overs, reheated and cold.

A quick and easy dinner that is seriously amazing with how little effort is required. Light and refreshing flavors that will enhance whatever pasta you decide to dress up. This recipe is great all by itself or can be an amazing start to whatever meat or vegetables you choose to incorporate, make it your own because you are the one who will be eating.

Ingredients

Instructions

  1. Bring a large pot of water to boil.
  2. Shred zucchini, slice mushrooms, dice onions, and add to a pot with butter.
  3. Cook for about 8 minutes or until the veggies become tender and zucchini has cooked down a lot.
  4. Add the lemon, cream, garlic, and the parmesan cheese to the pot, mix well.
  5. Add your pasta, pasta water and needed, and fold in that spinach until it wilts. Mix well.
  6. Top with more parmesan cheese, serve with crusty bread, and balsamic salad! Enjoy!
